Menu Monday

Its Monday again!  You know what that means...


So last week I didn't follow my plan that great!  Opps...  I did however eat items in the house so I didn't really spend too much extra money!  So some of these items are going to be a repeat from last week...  I am going to include recipes for some things that I thought I had linked last week and didn't...  OPPS!  That was brought to my attention later in the week by a friend!  Sorry!!!

Monday:  Lasguna

My mouth is watering thinking about this!  I had this on the menu last week but I accidentally bought tomato paste instead of tomato sauce so I couldn't make it...  That made me sad!  LOL!!!  Here is the recipe for it:

Tuesday:  Easy Cheesy Chicken Enchilada


Campbell's Soup recipe!  Amazing!  If you haven't tried it you should!!!

Wednesday:  Mongolian Beef

I credit my love for Mongolian Beef to pregnancy with Chrissy!  I couldn't get enough "hot" food.  I am so sad because the restaurant I would get this at closed and I was left with no Mongolian beef...  Until I found this packet!  I will admit that it is not hot but it is super easy and very very yummy!  I am going to experiment this time with some chili sauce I found in the isle where I get the seasoning packet and see if I can spice it up a notch!  Oh I can not wait till Wednesday gets here! 

Thursday:  Italian Wine Chicken



This has been on the menu for weeks and kept getting pushed off.  I'm not sure why.  Lack of motivation I guess.  I am going to premake it on Wednesday so Thursday morning I only have to throw it in the crock pot and turn it on.  This way I will not have to think about it and there for will not push it off another week!

This was on a previous Menu Monday but in case you missed it here is the recipe:

4 Chicken Breasts
1/4 cup white wine
1 pkg of good seasons Italian salad dressing mix

Brown chicken.  Place in crock pot.  Sprinkle with salad dressing.  Add wine... 
Cover and cook on high for 6+ hours. 

I usually then serve it with noodles and pasta sauce.

Friday:  Movie Night

Saturday:  Chicken Squares

Sunday:  Homemade Deep Dish Pizza

 This was pushed off from the previous week.  I didn't feel like cutting up all of the vegetables.  I know...  Slacker!  Well, I have it on the menu again this week and this week I'm actually feeling it...  So I can't wait to make it!

So there you have my meal plan for the week!  I wonder how much my groceries will be this week because I am pretty low on EVERYTHING in the house!

Big Sister Craft

So as you have found out we are expecting #2 in October!  We are still over the moon about our little surprise!  Anyways, we had to come up with an idea to tell our parents! 

Well, it worked out to our advantage that my godfather's wife, Beckie, had her birthday on March 1st.  Since she was still in Arizona and wouldn't be back till the 2nd we decided to do a dinner with my parents, Jake's parents, and Beckie and Rich ("adopted" grandparents!) Friday night.  Then we would go back to our house for cake.  Jake and I planned to have Chrissy run downstairs with a "big sister" shirt and see who notices first!

So we went online and looked at some shirts that we could get...  these are a few that we found...





So to get one of these shirts here in time for our announcement we would have to pay an arm and a leg!  So what's the next best thing...  Actually not sure why I didn't think of it first?  If you guessed I make it myself you would be right on!!!

So I didn't take pictures of the process.  I know bad me!!!  I got all the supplies at Hobby Lobby except for the shirt.  That I got from Target.  Make sure you wash and dry the shirt before applying the iron transfers.

Not the best picture but you get the point!  She insisted she hold her bouncy balls in the picture and I wanted her to hold still so I let her! 
I am soooo happy with the way it turned out and I actually like it better than any of the ones I could have gotten online or in a store!!  It's also handmade so it is special too.  A keepsake!

SURPRISE

So we came back from Arizona and low and behold I am exhausted!  I couldn't keep my eyes open Monday afternoon and Chrissy and I just laid in the living room and napped off and on!  I felt like I was coming down with a cold.  Not feeling right.  Sinus stuff. 

Tuesday, still EXHAUSTED even though I slept really good the night before.  I took Chrissy to school and went to do my normal weekly grocery shopping. 

I have very strange cycles and tend to miss months every so often so I think I just pushed off the date in my head.  So I am not sure what made me realize that I was "late".  I worked up the courage to get a pregnancy test because even though I'm 30 I still feel odd buying one.  I decided that since every time I usually buy one its negative and I hate myself for spending the money on them I went to the dollar store and got one there.  I didn't want to take it because this is what usually happens to me...  I'm late, I buy a test, I take the test, its negative, and the next day I start.  I was going to wait to take it so I wouldn't waste the money even though it was only a $1 this time.  I know cheapskate me!  LOL!!! 

So anyways, I take the test later.  I do what it says and the directions say results in 3 min.  So I'm sitting there playing with my phone and I swear to you not 1 min later this is what I see:


So of course I call Jake...  I said I think this is saying I'm pregnant?!?  Well, I couldn't believe my eyes!  REALLY!!!  So we had to go out and get the digital one because could we really trust a $1 store test...  LOL

OMG!  OMG!  OMG!  OMG!!

So there you have it!  SURPRISE!  We are in shock!  Since my cycles are such a mess we believe we are having an October baby!  I am hoping they give me an ultrasound soon so we can confirm that!

So many of you might be wondering why we are so surprised...  We tried for over a year to have Chrissy and ended up on fertility treatments to get pregnant with her.  This time we just played it by ear.  We weren't trying but we weren't stopping anything.  Its been over 4 months probably more like 6 that we've been doing that and nothing happened.  I was just under the impression that we would need help again.  We were shocked and blessed with this miracle!  Overjoyed!!!

Shamrock Wreath

Long time no blog...  I know, I know!  I'm back and promise I'll get back on track.  I just realized this morning I must be way behind on my 52 week organization!  Yikes!  Afraid to look at what I missed and what I have to catch up on!

So anyways, I decided this week it was about time to take down my Valentine's Day decorations...  I know I'm totally slacking!  I needed a new wreath for the back of my front door though...  Off to the dollar store I went! 

Here is what I got:


I got 4 packs of cut out shamrocks and a wreath form.  I already had the mod podge as you've seen from other posts!

So I started off by covering the edges of the form.  I did this my overlapping the shamrocks so nothing was showing.  I also only used the non glittered ones.  No particular reason just my preference!



This was super tricky to keep them from sliding around and sticking to the form.  If I had to do it again I would probably use a different glue but I am at a loss as to what I'd use so I can't help you on that! 

Once I went all the way around I moved to the inside...  For this I precut the shamrocks to fit the inside perfectly. 



Once I let it dry a little bit I trimmed the shamrocks that were on the front of the wreath so I had a flatter surface to start applying the glittered shamrocks on.



I did 1 layer of shamrocks and really thought it was turning out great!  I wanted a little more though so I added another layer!



I need to take another shot of this at a different angle.  I took this as I was running out the door so it isn't the best picture!  I really like the way it turned out though!
