Menu Monday

Monday has returned...  So without further ado my menu for the week:

Monday:
Bacon Ranch Slowcooker Chicken

Tuesday:  Valentine's Day
Fillet & Smashed Potatoes
OK, I know that isn't a fillet in the picture but this is the only picture I had...  You get the idea!!!  I'm hoping to have a little candle lit dinner with Jakey and eat this yummy dinner.  The potatoes are from pinterest and we've made them before!  They are amazing!!!  Here is a link for the recipe:

Wednesday:
Italian Wine Slowcooker Chicken

This isn't actually the meal.  Its close to what it looks like.  I usually add some pasta sauce over it and make it into a mock chicken Parmesan!  It is also a recipe I got from a friend so I have no link to it...  Its super easy though!!
  • Dry Italian dressing packet
  • 1 small bottle of white wine
  • 2-3 chicken breasts
  • crockpot on low for 8 hours
That is it!  I serve over noodles.  Super moist and yummy!!

Thursday:
Lasagna

Sorry no picture!  I'll have to take one when I make it this time.  It is one of my recipes that I got from a friend.  It is not so much of a standard lasguna though.  I'd call it a mock lasguna or quick lasagna!  Super yummy though!  I will preassemble this wednesday so all Jake has to do is put it in the oven on thrusday so I can come home to a yummy hot dinner after dance classes!

Friday:
MOVIE NIGHT!!! 

Saturday:
Hamburger and Fries


 The hamburgers are just my premade hamburger patties from the half of a cow we buy from our cousins in July.  We usually top them with sharp chedder!  Yummy!  Then the fries are the homemade ones from last week.  (Well, fresh, just the recipe!)

Sunday:
Sirloin Tip Roast
So I think I might make this Sunday.  I never made it this way but this picture is making my mouth water.  It looks like it might take some time so Sundays are good days to do this...  I found this recipe on pinterest.  Here is the link:

Wild Recipe Wednesday

So I admit I was a little lazy the last few days.  I didn't do much.  I worked and cooked and did a little laundry.  This would pose a problem with something inspiring to post.  I want to be inspiring...  That's my goal.

So, since I don't have much to talk about and last few days have consisted of cooking dinners I thought I would share a couple of things I made.  I found these 2 new recipes on Pinterest.

Shredded Buffalo Chicken and Smashed Potatoes.  (I did not make these 2 on the same day though)


First up:  Shredded Buffalo Chicken

This was super yummy.  Here are the ingredients:
  • Bottle of Franks Hot Sauce Buffalo Sauce
  • 1 Packet of Ranch Dip
  • Chicken
  • Cream Cheese (4-8 oz)
  • 3 tablespoons of margarine
The best part about this recipe is it all goes in the crock pot!!! 
Frozen Chicken in the crock pot.  Whole bottle of Franks Buffalo Sauce, 1 Packet of Ranch Dip.
After 7 hours remove the Chicken and Shred.
Put the chicken back in the crock pot and add the cream cheese and the margarine in.
Cook for another hour to let the juice soak in!
We enjoyed ours on a bun with sharp cheddar on top!  I also made myself some chicken nachos after I ate my sandwich!

Yummy, Yummy in the Tummy, Tummy!!!!

Here are the ingredients:
  • Potatoes
  • Kosher Salt
  • EVOO
  • Thyme (or other herb of your choice)


Boil the potatoes in water with salt in it for about 25 minutes.

I lined my pan with foil and GENEROUSLY smeared it with EVOO.

Set the potatoes on the pan and smash them with a potato smasher.

Brush the potatoes with EVOO.

Sprinkle each potato with Kosher Salt and thyme.  Bake in oven at 450 degrees for 25 minutes.
Enjoy!
These potatoes are just the right combination of crispy and soft!  WOW I can't say enough how good these were!  My mouth is watering just thinking about them.
